UJI CEMARAN SALMONELLA PADA MINUMAN ES CAPPUCINO CINCAU YANG DIJUAL DI KOTA KENDARI

ABSTRAK
Minuman es cappuccino cincau merupakan campuran antara kopi cappuccino dan susu kental manis dengan tambahan es batu dan cincau yang justru memberi tekstur unik namun tidak asing saat dikonsumsi. Cincau merupakan jenis nabati yang mempunyai kandungan karbohidrat tinggi, biasa digunakan sebagai bahan campuran minuman. Tujuan dari penelitian ini yaitu untuk mengetahui keberadaan Salmonella sp. pada minuman es cappuccino cincau yang dijual di Kota Kendari dan untuk mengetahui persyaratan mutu dari segi bakteriologis dari minuman es cappuccino cincau yang dijual di wilayah Kota Kendari dengan menggunakan jenis penelitian deskriptif. Berdasarkan hasil penelitian yang telah dilaksanakan di Laboratorium Mikrobiologi Akademi Analis Kesehatan Kendari diperoleh hasil satu sampel positif Salmonella sp. dan tidak memenuhi persyaratan mutu dari segi bakteriologis.

ABSTRACT
Ice drinks cappuccino cincau is a mixture of cappuccino coffee and sweetened condensed milk with extra ice cubes and cincau which actually gives a unique texture but no stranger when consumed. Cincau is a vegetable type that has high carbohydrate content, commonly used as a mixture of drinks. The purpose of this research is to know the existence of Salmonella sp. On ice cappuccino cincau drinks sold in Kendari City and to determine the quality requirements of bacteriological aspects of ice cappuccino cincau drinks sold in the region of Kendari City by using this type of descriptive research. Based on the results of research that has been conducted in the Laboratory of Microbiology Academy of Health Analyst Kendari obtained a positive sample of Salmonella sp. and does not meet the quality requirements in terms of bacteriological.Keywords : Ice drink cappuccino cincau, Salmonella sp.
